I recently decided to try out making my own fudge. So i looked up a few recipies on the internet and picked out a few that looked the most straightforward. but when i treid them out they just didnt turn out right! they either got the texture of toffee souce, or they tasted like plain butter and sugar! so as you can imagin i was disappointed. anyway i was wondering if any of you guys could help me find that perfect fudge recipe? It would be greatly appreciated thanks
Here is one I have used with success. It is from "The Tate and Lyle Sweet Success cook book". 1lb (450gm) caster sugar, Quater pint (150ml) evaporated milk, 2oz (50gm) butter, 3 tablespoons (45ml) water, quarter pint (150ml) full milk. Put all ingredients into a large pan. Stir over gentle heat until sugar is dissolved and then boil to 240f (115C) Beat well until mixture thickens and becomes grainy. I have found that the temperature has a lot to do with the texture. It's down to trial and error in most cases I'm afraid like with most sweets. Hope this helps.
They key appears to be getting the temp right. A sugar thermometer is usually required to make sure. However, have a look at this http://pennypincherspantry.wordpress.com/2007/12/10/nigellas-pistachio-chocolate-fudge/. It isn't, strictly speaking, fudge, but it's easy and yummy!! I've tried it.
I bought a few nestle books. I had to save so many tokens then it was less than a fiver. The recipes are easy to follow and so delicious. (I put on half a stone so don`t make it any more) Just can`t make it last, like jaffa cakes. I don`t buy then coz I eat the packet.
